Week in Review?
It would seem that I've been slacking a bit on my posts lately - we've had a stomach flu bug making its rounds at my office lately, and it decided to spend some time with me last week, so I haven't felt much like taking up my laptop to chronicle my meals. I've mostly been living on oven-roasted veggies paired with whatever sounds like I can keep it down, but I've made a couple of gems this week, too.
This meal went down in the record books of my kitchen. I paired some roasted carrot chips and steamed sugar peas with a recipe for stuffed chicken I found on Skinny Mom, here.
I used:
1 boneless, skinless chicken breast 8 asparagus spears, trimmed and halved 1 Laughing Cow Light cheese wedge 1/4 cup panko bread crumbs heavy dash of garlic and herb seasoning heavy dash of salt toothpicks
Preheat the oven to 375F degrees. Spray a baking sheet with cooking spray. Place the chicken in a plastic bag, and pound flat using a meat mallet (or a hammer, in my case). Cut the chicken in half lengthwise. Add panko bread crumbs and seasonings to a medium bowl. Slice the Laughing Cow into two equal parts. Lay out the chicken and spread Laughing Cow half on each cutlet. Place 8 of the asparagus spear halves towards the bottom of each cutlet (I used 4 tops and 4 bottoms). Roll each cutlet, keeping tight, and secure with a toothpick or two. Dip the rolled cutlet into the panko mixture, covering all sides. Place on the baking sheet and bake for 20-25 minutes.

Another gem from this week was my breakfast this morning. I took some inspiration from @daphneoz's #relish and made a delicious, 70 calorie broiled grapefruit. Instead of using ginger and sugar like she did, I substituted Truvia baking blend and vanilla extract.
1 half grapefruit 1 TBSP Truvia baking blend 1 tsp vanilla extract
Preheat the oven to 375F degrees. In a small bowl, combine Truvia and vanilla, and combine with a fork. Spread mixture on top of grapefruit, covering evenly. Bake for 10 minutes.
