Ingredients: 1 cup gluten-free all-purpose flour. 1/2 cup cocoa powder. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1/2 cup unsalted butter, melted. 1/2 cup granulated sugar. 1/4 cup brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup semi-sweet chocolate chips.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a medium bowl, whisk together the gluten-free flour, cocoa powder, baking powder, and salt. In a separate bowl, mix the melted butter, granulated sugar, and brown sugar until well combined. Add the egg and vanilla extract to the butter mixture and stir until smooth. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Fold in the chocolate chips. Scoop spoonfuls of cookie dough onto the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes, or until the edges are set but the centers are still slightly soft.
