These chocolate brownie pudding cookies combine the rich flavors of a brownie with the soft and chewy texture of a classic cookie. They are perfect for satisfying your chocolate cravings and make a delightful treat for any occasion.
Ingredients: 1 cup 2 sticks unsalted butter, softened. 1 cup granulated sugar. 1 cup packed light brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 1/2 cup unsweetened cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1 cup chocolate chips. 1 cup chopped walnuts or pecans optional.
Instructions: Preheat your oven to 350F 175C and line baking sheets with parchment paper. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips and chopped nuts if using into the cookie dough. Drop spoonfuls of dough onto the prepared baking sheets, leaving enough space between each cookie. Bake the cookies for 10-12 minutes or until the edges are set but the centers are still slightly soft. Remove the baking sheets from the oven and let the cookies cool for a few minutes before transferring them to wire racks to cool completely. Enjoy these delicious chocolate brownie pudding cookies with a glass of cold milk!
