Ingredients: 1 box of brownie mix. 1/2 cup 1 stick of unsalted butter, melted. 1/4 cup of water. 2 large eggs. 1 cup of heavy cream. 1 cup of semi-sweet chocolate chips. 1/4 cup of powdered sugar. 1 teaspoon of vanilla extract. 1/4 cup of cocoa powder. 1/2 cup of hot water. 1 envelope of unflavored gelatin about 2 1/4 teaspoons. 2 cups of whipped cream. Chocolate shavings or cocoa powder for garnish.
Instructions: Preheat your oven to 350F 175C and grease a 9-inch round springform pan. In a mixing bowl, combine the brownie mix, melted butter, water, and eggs. Stir until well mixed, and then pour the batter into the prepared pan. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs. Let it cool completely in the pan. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between, until fully melted and smooth. Set aside to cool slightly. In another bowl, whip the heavy cream until it starts to thicken. Add the powdered sugar and vanilla extract, and continue to whip until stiff peaks form. Fold in the melted chocolate until well combined. Spread the chocolate mousse over the cooled brownie layer in the pan. Refrigerate while you prepare the gelatin mixture. In a small bowl, mix the cocoa powder and hot water until smooth. In a separate microwave-safe bowl, sprinkle the gelatin over 1/4 cup of cold water and let it sit for a minute. Then, microwave the gelatin mixture for about 20 seconds, until it's dissolved. Stir the dissolved gelatin into the cocoa mixture until well combined. Allow it to cool to room temperature. Gently spread the cocoa mixture over the chocolate mousse layer in the pan. Refrigerate for at least 2 hours, or until set.
