These chocolate cupcakes don't need any flour, so you can enjoy their rich, decadent flavor. Great for people who don't eat gluten or just love treats that are very chocolatey!
Ingredients: 1 cup semisweet chocolate chips. 1/2 cup unsalted butter. 3/4 cup granulated sugar. 3 large eggs. 1/2 cup unsweetened cocoa powder. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Warm the oven up to 375F 190C and put cupcake liners in a muffin tin. Using 30-second bursts to stir, melt the chocolate chips and butter together in a bowl that can go in the microwave. Add the sugar and mix it in well with a whisk. Add the eggs one at a time, making sure to mix well after each one. Now add the vanilla extract, salt, and cocoa powder and mix them in until the batter is smooth. Fill each cupcake liner about three quarters of the way to the top with batter. If you stick a toothpick into the middle and it comes out with moist crumbs instead of wet batter, the cake is done. After baking, let the cupcakes cool in the pan for 5 minutes before moving them to a wire rack to cool completely. If you want, you can sprinkle powdered sugar on top or use your favorite frosting once it's cool. Have fun!
