Ingredients: 1 lb Italian sausage, casings removed. 1 onion, chopped. 3 cloves garlic, minced. 1 carrot, diced. 1 celery stalk, diced. 1 can 15 oz white beans, drained and rinsed. 1 can 14 oz diced tomatoes. 4 cups chicken broth. 1 teaspoon dried oregano. 1 teaspoon dried thyme. Salt and black pepper to taste. 4 cups fresh baby spinach. Grated Parmesan cheese for serving.
Instructions: Put the Italian sausage in a big pot and cook it over medium-low heat, breaking it up as it cooks. Cut up the onion, garlic, carrot, and celery and add them to the pot. Cook the vegetables until they get soft. Add the white beans, diced tomatoes, chicken broth, and dried oregano and thyme. To taste, add salt and black pepper. Lower the heat and let the soup cook for 15 to 20 minutes. This will give the flavors time to blend. Add baby spinach that is still fresh and cook until it wilts.
