Story
Pancakes are a breakfast staple for many people, but none take me back to my childhood like my grandmother’s. She serves pancakes warm, thick and wholesome. We would drench them with homemade maple syrup, top them with freshly picked strawberries or, if you are my little brother, slather them in ketchup.
Although my grandma could whip up just about anything in her kitchen, nothing compares to sitting down to her pancakes in an old farmhouse and fighting for a little elbow room—much like the generations before us.
Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
3 tablespoons butter, melted
1 egg
1 1/4 cups milk
cooking spray
Method
1. Sift together flour, baking powder, salt, and sugar in a large bowl.
2. Whisk in melted butter, egg, and milk until combined. Let batter rest for 5 minutes.
3. Preheat a large skillet over medium-high heat. Spray with cooking spray.
4. Pour batter onto the hot skillet in dollops, about 1/4 cup of batter for each, with a couple inches of space in between. Cook for 2 to 3 minutes, until bubbles appear on the sides and center of each pancake. Flip and cook until golden, about 1 to 2 minutes.
5. Serve them warm and topped with local, homemade maple syrup.
