How much is their in a pen nib is it entirely made out of it or just plated in it?

Typically, it’s just the tipping material in a fountain pen that needs to be wear resistant, so a very small amount:

If it’s so light why do they call it “ultra-high molecular weight polyethylene.”?

Ultra-high molecular weight refers to the fact that the chains of polyethylene in this material are very long (relative to other forms of polyethylene, at least) and thus have much higher molecular weights. As there are many other forms of polyethylene, this is just a way of distinguishing between them (high density polyethylene, ultra low molecular weight polyethylene, cross-linked polyethylene...)

The important thing to note here is that this is only relative to other forms of polyethylene. Compared to other polymers, conventionally used for their strength, UHMWPE is lighter.
