Wanted to eat something healthy and different other than rice, roti or pasta and this stir fried bulgur with veggies was quick and easy to prepare, a light and healthy lunch which was easy to digest. I stir fried the fresh vegetables in olive oil, sprinkled some salt, pepper and dried fine herbs, then added the steamed bulgur to it.
