Orecchiette Broccolini and Chicken Sausage Servings: 4 . 2 cups orecchiette pasta 1 bunch broccolini, chopped 1 to 2 inch pieces 2 tbsp extra-virgin olive oil, divided 2 cloves of garlic, crushed 1 tsp red pepper flakes Salt to taste 1 pound (about 4 to 5 links Italian chicken sausage), casing removed 2 tbsp grated Parmigiano Reggiano or Pecorino cheese 1. Chop the broccolini into 1 to 2 inch pieces – leaves, florets, and all. 2. In a large sauté pan over high heat, pour about 1 tablespoon of olive oil and add the Italian chicken sausage (casing removed). Mix well with a wooden spoon and break into pieces. Cook until browned, using your wooden spoon scoop cooked sausage and transfer to a bowl, set aside. 3. Immediately add the remaining tbsp olive oil, chopped broccolini to the hot pan, garlic, salt, and pepper flakes. Stir and continue cooking for 3-4 minutes until the broccolini turn a bright green colour and can be pierced with a for fork easily. 4. Add the chicken, using a slotted spoon scoop pasta into the pan with broccolini.
