I was actually thinking along the same lines about sangwoo's weird tolerance/numbness (??) to taste. My theory was that he faced childhood trauma (and sometimes traumatic experiences numb peoples senses) but it didnt explain the part when he seemed to have no side effects from consuming rat poison. I was really confused about it, but your theory on his mother building a tolerance for him and herself, which gave him side effects, makes alot of sense! I hope his mothers story is revealed soon.
I read that as well, in regards to childhood trauma, but I came to the same conclusion as you did: it doesn’t relate to the rat poison affecting Sangwoo. I have so many thoughts on Sangwoo’s mom... seriously. She’s no angel, the devil’s in the details.
