These tasty and filling Paleo Sweet Potato Bacon Burger Bites make a great start to a meal or snack. Rich in taste from the sweet potato, bacon, and seasonings, these are ideal for a Paleo diet.
Ingredients: 1 large sweet potato, peeled and grated. 1 lb ground beef. 6 slices bacon, cooked and crumbled. 1/2 onion, finely chopped. 2 cloves garlic, minced. 1 egg. 1 tsp paprika. 1/2 tsp salt. 1/4 tsp black pepper. 1/4 cup almond flour. Coconut oil for frying.
Instructions: Preheat oven to 400F 200C. In a large bowl, mix together grated sweet potato, ground beef, bacon, onion, garlic, egg, paprika, salt, black pepper, and almond flour until well combined. Form mixture into small burger patties, about 1.5 inches in diameter. Heat coconut oil in a skillet over medium heat. Cook the burger bites in batches, about 2-3 minutes per side or until golden brown and cooked through. Transfer cooked burger bites onto a baking sheet lined with parchment paper. Bake in the preheated oven for an additional 10 minutes to ensure they are fully cooked and heated through. Serve hot and enjoy!
