These Chicken, Rocket and Spicy Red Pesto Burgers are a delightful combination of flavors. The juicy grilled chicken is complemented by the peppery arugula, the zingy red pesto, and the creamy mozzarella cheese. It's a burst of taste in every bite!
Ingredients: 2 boneless chicken breasts. 1 cup fresh rocket arugula leaves. 4 burger buns. 4 tablespoons spicy red pesto. 4 slices of mozzarella cheese. 1 tomato, sliced. 1/2 red onion, thinly sliced. Salt and pepper to taste. Olive oil for grilling.
Instructions: Preheat your grill or stovetop grill pan to medium-high heat. Season the chicken breasts with salt and pepper. Brush the chicken breasts with olive oil to prevent sticking. Grill the chicken breasts for about 5-6 minutes per side, or until cooked through and no longer pink in the center. While the chicken is grilling, cut the burger buns in half and toast them on the grill until they're lightly browned. Once the chicken is cooked, remove it from the grill and let it rest for a couple of minutes. Assemble the burgers: Spread a tablespoon of spicy red pesto on the bottom half of each bun. Place a grilled chicken breast on top of the pesto. Add a slice of mozzarella cheese on top of the chicken breast. Layer with fresh rocket leaves, tomato slices, and red onion slices. Top with the other half of the burger bun. Serve the Chicken, Rocket and Spicy Red Pesto Burgers hot, and enjoy!
