Ingredients: 1 cup cooked quinoa. 1 can 15 oz black beans, drained and rinsed. 1/2 cup rolled oats. 1/2 cup grated carrots. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1/4 cup chopped fresh cilantro. 1 tsp ground cumin. 1/2 tsp chili powder. Salt and pepper to taste. 4 whole wheat burger buns. Toppings of your choice lettuce, tomato, avocado, cheese, etc..
Instructions: In a food processor, combine the black beans, rolled oats, grated carrots, chopped onion, minced garlic, cilantro, ground cumin, chili powder, salt, and pepper. Pulse until the mixture is well combined but still slightly chunky. Transfer the mixture to a bowl and stir in the cooked quinoa. Form the mixture into 4 burger patties. Heat a grill or stovetop skillet over medium-high heat and lightly oil it. Cook the veggie burger patties for about 4-5 minutes on each side, or until they are heated through and have grill marks. Toast the whole wheat burger buns on the grill or in a toaster. Assemble the burgers with your choice of toppings and condiments. Serve hot and enjoy!
