The (new) Whole Ox in Marshall opens to rave reviews!!
Amanda and Derek Luhowiak, owners of The Whole OX and their team have been blown away by the success of their first few weeks in the new Marshall, VA location. They like to say that they are “probably” the best butcher shop in Northern Virginia. If the last few weeks are any indicator of their true status - I’m thinking there’s no “probably” about it. The Ox Rules!
As soon as you walk through the door you are pleasantly overwhelmed by the incredible aromas brewing in the back. I am never completely sure what’s cookin’ - but I always know I want some! Extra bonus: the new space design offers a real treat – we TWOX fans are now able to watch Derek and crew create the day’s housemade delicacies from the open prep area in the back of the shop.
The yummy smells of the space are complimented by the warm, cozy feeling of the surround. The shop is absolutely charming, every detail thought of and executed beautifully (there is even a subtle homage to the former resident of this historic space – look closely and you’ll see the original signage from the Old Marshall Post Office). Very cool!
For those of you that were frequent visitors to The Whole Ox in The Plains, you will find all of the same stuff you love in the new Marshall shop - it’s just bigger, better and there’s lots more of it!
The kitchen has expanded from tiny to big enough - allowing Derek and team to create even more DELICIOUS, eat-in and takeaway housemade favorites, like tomato basil soup, walnut basil pesto, yummy stocks, meatballs, sausages - and we can all sleep at night knowing the larger space means there’s no chance they can’t prep our beloved, TWOX chicken pot pie – (whew!).
Lunch is served daily starting at 11:30am (but come early, the supply goes fast). Their impressive selection of fine wines is even more impressive and now there’s more craft beers to choose from too. The new Ox is offering even more luscious, local produce, charcuterie, and a greater selection of their Butcher shop specialty - humanely-raised, meat sourced from local farms.
The Butcher’s Bar Will Make Its Debut…
As you may know there are also plans to open a Butcher’s Bar, but the tremendous success (and demand) of the last few weeks has The Ox in a bit of tailspin. Determined to NEVER compromise on quality, the team has put The Butcher’s Bar on a temporary hold - but not to worry - it will make its debut one day soon.
The Butcher’s Dinners and Wine Classes will resume within the next few weeks and the TWOX team has a slew of ideas already in the works to make these special events TWOX-worthy. Plans include, possibly breaking down a whole pig and pairing with French wines. Or, maybe exploring America’s lesser-known wine regions like Idaho and Michigan. What ever they come up with, we’re in!
For now, if you are one of the three people who have not yet visited this TRULY fabulous butcher shop (now located in a gorgeous, hip new space in Marshall, VA) get there! You will be so glad you made the trip.

Had a local Astoria night out recently, so we stopped in at Butcher Bar on 30th, where I got The Monster: half brisket, half pulled pork, topped with cole slaw, all animal. Hit the jump for my write up.
“Growing up in Austin, Texas smoked BBQ is in our blood. Every Saturday night my parents would get mesquite and hickory burning in our 8 foot backyard smoker (that my dad had welded together) and tend to its fire overnight. On Sunday afternoon, right after church, we had us a good ol’ time. We wanted to offer a "Meatopia" of our favorite meats and the Butcher's Platter was born—a sampler of burnt end brisket, pork belly, and ribs topped with mac and cheese and bacon-string beans.
