Who’s going to try this Baked Brekkie muffin recipe. what a perfect start to your day 😘😋 6 eggs • 50ml low fat milk • 1/2 cup spinach • 1/2 cup cherry tomatoes • 1/4 cup diced onions • 1/4 tsp pepper • 1/2 avocado, sliced • salsa, for serving • feta for serving 1. Preheat oven to 180 degrees 2. Grease muffin pan with cooking spray 3. In a large bowl, whisk together the eggs, low fat milk, 1/4 tsp pepper 4. Stir in spinach, tomatoes and onions 5. Divide mixture evenly between 6 muffin pan cups and bake for 20-25 minutes, or until egg is fully cooked 6. Remove the muffins from oven and cool for 5 minutes in pan 7. Use knife to loosen the muffins around the pan cups 8.
