Enjoy the holiday flavors of eggnog, cheesecake, and cake in a delicious parfait. A wonderful holiday treat is made with layers of moist yellow cake, smooth cream cheese, and creamy eggnog pudding.
Ingredients: 2 cups eggnog. 1 package 3.4 oz instant vanilla pudding mix. 1 cup heavy cream. 8 oz cream cheese, softened. 1/2 cup granulated sugar. 1 tsp vanilla extract. 1 box yellow cake mix, prepared according to package instructions. 1/2 cup rum optional. Gingersnap cookies, crushed for garnish.
Instructions: Whisk eggnog and instant vanilla pudding mix together in a bowl until they are well mixed. Put it in the fridge for 10 minutes to set. Heavy cream should be whipped in a different bowl until stiff peaks form. Add the whipped cream to the eggnog pudding mix and mix it in. Put it in the fridge for another 15 minutes. Mix the sugar, vanilla extract, and cream cheese in a different bowl until the mixture is smooth and creamy. Add the rum to the cream cheese mixture and mix it in. Put the ready-made yellow cake, the eggnog pudding mixture, and the cream cheese mixture in serving glasses or jars. Put more layers on top of each other until the glasses are full, and finish with a dollop of the eggnog pudding mix. Put the parfaits in the fridge for at least two hours to let the flavors mix. Add crushed gingersnap cookies to the top before serving to give it more texture and flavor.
