"Back in Ireland, my mom used to bake birthday cakes for us every year. So when I had my first son 10 years ago, I wanted to keep the tradition going and start making birthday cakes of my own. But hers was always very simple, and I wanted to do something different, so I bought book on cake decorating and I was immediately hooked. I couldnt believe how much you could do with cakes - the fondant, the artistry, the 3D type stuff - and I just started teaching myself. To this day I've never taken a class. So after that, I began making them for all my family members, and every single month I'd bake a different cake for another person's birthday and just experiment with all these ideas. It took a bit of time for me to feel fully confident in building a business out of cakes. I wanted to make sure I could deliver something that both looked and tasted exceptional, and after 10 years of doing this I think I've got it nailed down. I'm an artist at heart, and I'd say the creativity and artistry from cake decorating really pushes me through. It's hard to build a business out of this, but to this day I find no greater joy than baking a cake. It's still very therapeutic to me. There's nothing quite like the feeling of spending all this time creating something beautiful and seeing someone's reaction to it.
