Add a Caprese twist to your avocado toast to make it better! This recipe makes a delicious breakfast or brunch dish by combining creamy guacamole with fresh tomatoes, mozzarella, and a drizzle of balsamic glaze.
Ingredients: 2 ripe avocados. 1 lime, juiced. 1/4 cup red onion, finely diced. 1/4 cup cilantro, chopped. 1 jalapeo pepper, seeded and minced. Salt and pepper to taste. 4 slices of whole-grain bread. 2 ripe tomatoes, sliced. 4 ounces fresh mozzarella cheese, sliced. Balsamic glaze for drizzling. Fresh basil leaves for garnish.
Instructions: Take the pits out of the avocados and cut them in half. Then, scoop the flesh into a bowl. To the bowl with the avocados, add the jalapeo, lime juice, red onion, cilantro, salt, and pepper. Mix it all together until the guacamole is the consistency you want. Make the whole-grain bread crispy by toasting it. Use a lot of guacamole to cover each piece of toast. Cheese and tomato slices should be put on top of each toast. Cover the toppings with balsamic glaze. Add some fresh basil leaves as a garnish. Serve right away and enjoy!
