This Veggie-Packed Vegan Queso Cheese Sauce from Beautiful Ingredient tastes great and is creamy like regular queso. It's full of healthy vegetables and creamy cashews, and you can dip or drizzle it over your favorite foods.
Ingredients: 1 cup raw cashews, soaked for 4 hours or overnight. 1 cup unsweetened almond milk. 1/2 cup nutritional yeast. 1/4 cup diced carrots. 1/4 cup diced red bell pepper. 1/4 cup diced onion. 2 cloves garlic, minced. 1 tablespoon lemon juice. 1 teaspoon smoked paprika. 1/2 teaspoon turmeric. Salt and pepper, to taste. 1 tablespoon tapioca starch optional, for thickening.
Instructions: In a blender, combine soaked cashews, almond milk, nutritional yeast, diced carrots, red bell pepper, onion, garlic, lemon juice, smoked paprika, turmeric, salt, and pepper. Blend until smooth and creamy, scraping down the sides as needed. Transfer the mixture to a saucepan over medium heat. If using tapioca starch, whisk it in now to thicken the sauce. Cook, stirring frequently, until the sauce is heated through and thickened to your desired consistency, about 5-7 minutes. Taste and adjust seasoning if needed. Serve warm as a dip with tortilla chips or drizzle over nachos, tacos, or baked potatoes. Enjoy!
