Ingredients: 1 whole turkey 12-14 pounds. 1/2 cup kosher salt. 1/2 cup brown sugar. 1/4 cup smoked paprika. 1/4 cup black pepper. 1/4 cup garlic powder. 1/4 cup onion powder. 1/4 cup dried thyme. 1/4 cup dried rosemary. 1/4 cup olive oil. 1 cup apple wood chips, soaked in water.
Instructions: Remove giblets from the turkey and pat it dry with paper towels. In a bowl, mix kosher salt, brown sugar, smoked paprika, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary to create the rub. Rub the turkey with olive oil, ensuring an even coating. Apply the spice rub generously over the entire turkey, including the cavity. Preheat the smoker to 225F 107C. Add soaked apple wood chips to the smoker for a mild, fruity flavor. Place the turkey on the smoker grates, breast side up. Smoke the turkey at 225F for approximately 30 minutes per pound, or until the internal temperature reaches 165F 74C. Baste the turkey with pan juices every hour to keep it moist.
