A tasty and refreshing pasta salad with a mix of fresh vegetables, beans, cheese, and a tangy ranch dressing that is based on cowboy food.
Ingredients: 2 cups cooked pasta shells. 1 cup cherry tomatoes, halved. 1/2 cup corn kernels. 1/2 cup black beans, drained and rinsed. 1/4 cup red onion, finely chopped. 1/4 cup green bell pepper, diced. 1/4 cup fresh cilantro, chopped. 1/4 cup shredded cheddar cheese. 1/4 cup ranch dressing. 1 tablespoon lime juice. Salt and pepper to taste.
Instructions: In a large mixing bowl, combine the cooked pasta, cherry tomatoes, corn, black beans, red onion, green bell pepper, cilantro, and cheddar cheese. In a small bowl, whisk together the ranch dressing and lime juice. Season with salt and pepper to taste. Pour the dressing over the pasta salad and toss until everything is evenly coated. Chill the pasta salad in the refrigerator for at least 30 minutes before serving. Serve chilled and enjoy!
