Ingredients: 1 small head cauliflower, chopped. 2 tablespoons olive oil. 1 onion, finely chopped. 3 cloves garlic, minced. 1 carrot, grated. 1 celery stalk, finely chopped. 1 can 14 oz crushed tomatoes. 1 teaspoon dried oregano. 1 teaspoon dried basil. Salt and pepper to taste. 300g pasta of your choice. Fresh parsley, for garnish. Grated Parmesan cheese, for serving.
Instructions: In a large skillet, heat olive oil over medium heat. Add onion and garlic, saut until fragrant, about 2 minutes. Add chopped cauliflower, carrot, and celery. Cook until vegetables are tender, about 8-10 minutes. Stir in crushed tomatoes, dried oregano, and dried basil. Season with salt and pepper to taste. Simmer the sauce for 10-15 minutes, allowing flavors to meld. Meanwhile, cook pasta according to package instructions until al dente. Once the sauce is ready, toss the cooked pasta in the skillet with the sauce, coating the pasta evenly. Serve hot, garnished with fresh parsley and grated Parmesan cheese.
