March is National Celery Month
Is it a coincidence that March is National Nutrition Month AND National Celery Month?? We think not.
Celery is one of those veggies that doesn’t get as much credit as it deserves. It often times takes a back seat to more popular veggies like carrots, cucumbers, and broccoli.
Celery has many positive features like being versatile in recipes. It’s a light and healthy snack all by itself, but it can become great just by adding a cream cheese spread or peanut butter (with a few raisins for a sweet treat). Coarsely chop celery and toss it into salads, or finely dice it and add it to your next tuna salad sandwich. Feeling under the weather and need to make some homemade chicken noodle soup? Celery is almost as important as the chicken. Don’t throw away the leaves… you can use them too!
Not only can you eat celery, but you can also juice it and drink it. There are so many nutrients in celery – it’s a great source of vitamins A and C. Celery has such a light taste that it can go into almost any smoothie without overpowering the other ingredients.
March is National Celery Month (AND National Nutrition Month)… so the next time you’re in the dining room, don’t forget to add some celery to your plate!
Sustainable/Green Tip: Another great thing about celery is that you can grow it at home. Yes, it’s one of those veggies that can be re-grown from scraps, very easily, right in your kitchen!
