Chaat is literally the best, especially in the summer when it’s too hot to eat hot food. What makes chaat better? Peanuts cooked two ways! Here I have roasted and boiled peanuts, early girl tomatoes, red onions, cilantro, mint, arugula, lime juice, kosher salt, lamb haas avocado (not authentic but I picked up some gorgeous lamb haas from the farmers market and they were grown in Fremont and they were the perfect ripeness level for chaat so I couldn’t resist and I’m a California girl, so naturally, I used ‘em...), chile powder, toasted cumin seeds, red onion, cucumbers, olive oil and chaat masala. Put whatever you want in it because it’s the chaat masala and lime juice that will make literally anything taste good. Did I mention it’s #vegan and also a good source of protein? Put all the things together and mix.
