Summer Fruit Chia Pudding

Light yet energy packed start to the day. 

Rich in anti-oxidants, omega 3, calcium and fibre.

6 tbsp chia seeds

1 banana

250ml coconut milk

250g frozen (or fruit) mixed berries

1 tbsp local honey plus extra to drizzle (or maple syrup if vegan) 

splash of good vanilla extract

generous handful of mixed nuts (I used almond slivers and pistachio)

Put all ingredients into a blender or food processer and mix well.

Pour into 4 ramekins and leave overnight in the fridge to set.

In the morning lightly toast your nuts in a dry pan, scatter over and then drizzle with the extra honey.

Blueberry Chai Chia Pudding

This is one of my favourite breakfast recipes.  It's quick, simple and packed with goodness.  You can find Mesquite powder in health food stores. This superfood, ground from the pods of the South American mesquite plant, is high in protein and is a good source of calcium, magnesium and amino acids.  It has a sweet, caramel like flavour and a low GI (glycemic index) to help stablise blood sugar levels.

Ingredients:

1 cup almond milk (or milk of your choice)

3 tbspns chia seeds

1/2 tsp cinnamon

1 tsp vanilla extract

1 tsp mesquite powder 

2 medjool dates, pitted

Method:

Combine all ingredients except for dates together and leave to sit for 10 minutes or so to allow the chia seeds to absorb the liquid.

Add to blender, along with dates and blend until smooth.

Serve topped with blueberries. 

NB: You can also substitute the dates for a sweetener of your choice, such as maple syrup, stevia or honey.  Also works well with other berries and topped with some sunflower seeds, pepitas or crushed nuts.
