These buttery and fragrant Chai Shortbread Cookies melt in your mouth! These cookies, infused with chai tea and warm spices, are ideal for a cozy treat.
Ingredients: 1 cup butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1 teaspoon chai tea leaves from tea bags or loose. 1/4 teaspoon ground cinnamon. 1/4 teaspoon ground cardamom. 1/8 teaspoon ground ginger. A pinch of ground cloves. A pinch of salt.
Instructions: In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the chai tea leaves, ground cinnamon, ground cardamom, ground ginger, ground cloves, and a pinch of salt to the butter-sugar mixture. Mix well to incorporate the spices evenly. Gradually add the all-purpose flour to the mixture, mixing until a smooth dough forms. Be careful not to overmix. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for about 30 minutes to firm up. Preheat your oven to 350F 175C. On a lightly floured surface, roll out the chilled dough to about 1/4-inch thickness. Use cookie cutters to cut out your desired shapes and transfer the cookies to a baking sheet lined with parchment paper. Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges of the cookies are lightly golden. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Optional: Dust the cooled cookies with a sprinkle of powdered sugar or a mixture of powdered sugar and chai spice for extra flavor and presentation.
