Ingredients: 1 cup canned pumpkin puree. 1 cup coconut milk. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 1 teaspoon pumpkin pie spice. 1/4 cup crushed graham crackers.
Instructions: In a blender, combine pumpkin puree, coconut milk, maple syrup, vanilla extract, and pumpkin pie spice. Blend until smooth. Pour the mixture into popsicle molds, leaving a little space at the top for expansion. Sprinkle crushed graham crackers into each mold, using a toothpick to distribute them evenly and create a swirl effect. Insert popsicle sticks into each mold. Freeze for at least 4 hours or until firm. To unmold, run the molds under warm water for a few seconds and gently pull out the popsicles. Serve immediately or store in the freezer in an airtight container.
