Food Hacks: Low Sodium Chakchouka
Many years ago, I was given this dish by a dear friend and was reminded of it recently due to my desire to mix up breakfast a bit, as well as get more out of my mornings with a spicy meal to start the day. Chakchouka is a well loved dish in Israel and can also be considered an evening or dinner meal in many places. After some heavy research, I have a version that can be heart healthy, as well as low sodium, as is the theme of this blog. If you make this for yourself, I highly suggest  When you try this , to pair it with your favorite bread , as you will want to eat every last bite of it.
What You Need
6 eggs
Olive oil
2 Minced Cloves Of Garlic
1 Chopped Bell pepper
½ A Diced Onion
4 cups of diced tomatoes ( If you use canned tomatoes , go for a salt free option)
balsamic vinegar
chili powder ( salt free)
cumin
paprika
Black Pepper
Cayenne pepper
tobasco sauce
How It's Done
First off, grab your skillet and heat the olive oil
Next, add your onion and  sauté until it begins to soften before adding your garlic and bell pepper
Add your tomatoes and vinegar then stir till it's well blended before adding your spices and Tabasco sauce. Once its's well mixed, taste you r mixture to see if it is to your preference, If not, add more of whatever you think is missing.
Crack your eggs directly over the mixture and spice em according to taste preference . Make sure there is space between them.
Cover with a lid or aluminum foil, and let it simmer for about 15 minutes so the sauce can reduce and be less watery , but make sure to watch for too much reduction as that may burn the mixture.
I highly suggest eating this with friends or family . Surprise a significant other with breakfast with this as a main entree  or even mix it up for a lunch treat!
