Prepped a few salads for the rest of the week. Quinoa, sunflower seeds, cucumber, cherry tomatoes, shredded carrots, grilled corn, spinach, and green onions. I forgot to add beans so I went back and did that, too. I’ll probably dice up some avocado and add it each morning because if I pack it now it’ll go brown :( I also packed little containers of salad dressing.
