This easy soup made in a slow cooker has all the rich, comforting flavors of a classic cheeseburger. This dish is hearty and great for any event because it has ground beef, vegetables, and lots of melted cheddar cheese.
Ingredients: 1 lb ground beef. 1 onion, chopped. 2 cloves garlic, minced. 3 cups potatoes, diced. 2 cups carrots, sliced. 2 cups celery, chopped. 4 cups chicken broth. 1 can 14 oz diced tomatoes. 1/2 cup ketchup. 1/4 cup yellow mustard. 1/4 cup all-purpose flour. 1/2 cup unsalted butter. 4 cups sharp cheddar cheese, shredded. 2 cups milk. Salt and pepper to taste. Crumbled bacon and green onions for garnish.
Instructions: Brown the ground beef in a pan and then drain off the extra fat. Put the beef that has been cooked, the onion, garlic, potatoes, carrots, celery, chicken broth, diced tomatoes, ketchup, and mustard in a large slow cooker. Melt the butter over medium-low heat in a saucepan. To make a roux, stir in the flour. Stir the food all the time for two to three minutes. Slowly add the milk while whisking the mixture so that it gets thicker. While whisking, add the cheddar cheese shreds and keep going until the mixture is smooth. Put the cheese mixture into the slow cooker and mix everything together well. Turn the heat down to low, cover, and cook for 6 to 8 hours, or until the vegetables are soft.
