May Day Lunch—Cheese Pudding from Porters Seasonal Celebrations Cookbook
This recipe is from the May Day chapter of the book and this is, I think, the third year that I’ve made it.
I did add cubed ham and dandelion greens to the recipe.
I didn’t have Wensleydale cheese available so I used cheddar.
I actually like ShadowCheese

Cheese Pudding
Cheese pudding has been popping up on tables since the 1600's. This recipe comes from Esther Copley's The Housekeeper's Guide (1838), a fun read. So proper!
The pudding makes a yummy supper (super kid friendly), or a tasty brunch dish. I like serving it in a pie dish which is a little more unexpected and makes for easy serving. A thick slab of bread with butter makes a fine addition.
Turn on the oven to 350F.
Serves 4.
4 beaten eggs
8 oz of sharp cheddar cheese
a dash of cayenne
a dash of nutmeg
nob of butter
Put the cheese and the beaten eggs into a bowl and add the spices. Mix together well.
Butter a glass pie dish and pour the eggy cheesy mixture into it.
Bake for about 30 minutes.
Done. Couldn't be easier.

I made Cheese Pudding today and it was delicious! I'm having a go at some baking tomorrow :D
