These steak and bean burritos are a delicious and satisfying meal that's perfect for a weeknight dinner. Tender slices of flank steak are combined with seasoned black beans and wrapped in warm flour tortillas, then topped with cheese, salsa, sour cream, and fresh cilantro.
Ingredients: 1 lb flank steak, thinly sliced. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 bell pepper, chopped. 1 can 15 ounces black beans, drained and rinsed. 1 teaspoon cumin. 1 teaspoon chili powder. Salt and pepper to taste. 4 large flour tortillas. 1 cup shredded cheddar cheese. 1 cup salsa. 1/2 cup sour cream. Fresh cilantro, for garnish.
Instructions: In a skillet, heat olive oil over medium-high heat. Add sliced flank steak and cook until browned, about 4-5 minutes. Remove steak from skillet and set aside. In the same skillet, add onion, garlic, and bell pepper. Cook until softened, about 3-4 minutes. Add black beans, cumin, chili powder, salt, and pepper. Cook for another 2-3 minutes. Return the cooked steak to the skillet and stir to combine with the bean mixture. Warm the flour tortillas in a separate skillet or in the microwave. Divide the steak and bean mixture evenly among the tortillas. Top each tortilla with shredded cheddar cheese, salsa, and sour cream. Fold the sides of the tortillas over the filling and roll up tightly to form burritos. Garnish with fresh cilantro before serving.
