Cheesy pasta with broccoli, mixed leaf salad, balsamic…..
Luckily I’ve been formulating a lot of pantry item recipes this winter (for not wanting to make a lot of grocery trips in the snow) so I am prepared for this pantry-intensive period of eating! Shelf stable barley, boxed almond milk, and frozen broccoli make this a super sustainable meal that you can have ingredients on hand for indefinitely. 👍 .. This cheesy broccoli barley risotto is PACKED with fiber & protein, and also contains beneficial B vitamins from @bobsredmill nutritional yeast! (which reminds me I have to get another order in 😳) Starchy pearled barley gives this risotto an extremely creamy texture and the roux base + nutritional yeast gives it the RICHEST cheesy flavor (it’s as close as I have ever come to replicating Velveeta)! 🧀 .. Cheesy Broccoli That Actually Tastes Amazing

Most recipes make it seem effortless. Steam broccoli, add cheese, done. But let’s be honest, if it were that easy, you wouldn’t be here searching for a better version. There’s a reason people keep Googling “cheesy broccoli recipe” and hoping this time it actually tastes good
