One of the benefits of working from home is that I can actually try to eat healthy by cooking muh own food! I’m saving money too 🤪@kelliecadoganmusic posted her sweet potato dish & wanted to know what people working from home cooked today. This is what I whipped up in my kitchen. It is a pretty simply meal and didn’t take a lot of prep time. Diced sweet potatoes & boiled them. Cooked some minced meat and when that was cooked tossed in the diced plantain along with the sweet potato in the in the frying pan. Buttered up my baking with sunflower butter and layered the potatoes & meat in it. Tossed a can of triple J mixed veg on top. The cheese sauce is easy to make. Grated some anchor cheese, onion, black pepper, hot sauce, three eggs, lil mustard and a dash of white wine. Whip it good and then pour it on top the potatoes and put the dish in the oven. I had a little bit of lettuce in the fridge so I shredded it, diced a cucumber, tomato, apple and couple apricots. I added a can of corn & tossed them. I added a few seasoned crotons and topped it off with some grated almonds. I ain’t going back in the kitchen til Wednesday!
