I always loved jicama because of its crunchy texture. However, when I'm doing raw days, cooked jicama isn't doable. So here's a raw jicama salad that is easy and scrumptious. It packs in a bunch of energy because of its bright flavor and will definitely get you through the day.

Salad Ingredients:
1 small jicama, peeled and chopped
1-2 red bell peppers, chopped
1-2 green bell peppers, chopped
1 apple, peeled and diced
1 tbsp raw sugar (granulated)
2 tsp extra virgin olive oil
Mix all the veggies and fruits together in a bowl.
In a separate bowl, add the orange juice, oil, and vinegar. Whisk until well combined.
Then add the sugar, salt, and pepper and mix.
Plate the veggies and add the the dressing to your taste. I find that I usually make too much dressing so I save the rest for another salad.
