Another awesome time tonight with some great friends and long time clients. Lowcountry Boil for 30 prepared on site! We next leveled this one! Thanks to @brockdupree3 for the help! -Smoked Boiled Peanuts off the Traeger. Yes, SMOKED! -Watermelon/Feta salad with a honey, lemon, Champaign vinaigrette. -Lowcountry Boil with shrimp boiled and sautéed in brown butter, garlic, super secret spices. -White Russian Tres Leches Cake. Right now we are all having to make do with what we’ve got!!!!!! That doesn’t mean we can’t eat good! Last night we had venison enchiladas. I found a can of enchilada sauce in the pantry and that sparked the idea. Had a roll of venison in the freezer but beef or chicken will work too! Made some guac with lime juice and cilantro. Chopped a plum tomato and a white onion. Made taco seasoning with @spiceology chili lime, smoked paprika, and chili powder. ***Fill the tortilla with the meat that was browned in the taco seasoning and olive oil. Roll the tortilla and place in a hot @smitheyironware chef’s pan with olive or grape seed oil. Brown a little. Surround with the enchilada sauce. Top with shredded cheese. Place in the oven for 10 mins at 350. Take it out and top with whatever you want. Had a couple things to do today. Charter at 7:30. Then headed downtown for a short photo shoot. Got to say “wasssup” to my man @swigswinebbq at the Wine and Food Festival. Then back to @thereddrum at 4:45 to help cook a 6 course, 51 plate dinner for 3 star Chef Frank Stitt!!! 😳😳Thanks to @benberryhill for the invite! Incredible night, incredible menu! Duck fat braised collards/Traeger smoked cauliflower/Mushroom and onion gravy/Red Clay Hot Sauce . . 7:30 text: “We may need you to cook from 1:00-5:00 today.” I call and text to find out what I’m cooking and where. 9:30 I get “its a “plant forward theme” and you need to be prepared to serve 800 portions”. 😳😳😳 No problem! Lol. We got there at 1:00. At 1:20 there were 50 ppl in line. At 3:00 and 800 portions later, there were still 50 ppl in line. had an absolutely blast and can’t wait to do it again!
