2021 definitely had its ups and downs. We lost some good people. I mean REALLY good people. Travis Holeman and Sean Keneally to name just a couple. Politics and beliefs aside, we can all agree that it sucks to loose good people, period! Still managed a ton of great fishing this year. Best bull red fishing Charleston has ever seen. Also managed to cook for, and with some really cool folks. Y’all know me and you know I keep it 💯! @dariusrucker @kevin_kisner and @ceelogreen are some of the coolest people I’ve ever hung with. Smoked Pumpkin Cheesecake with Sweet Cream Cheese and Salted Caramel! 1 pound ginger snaps 1.5 sticks unsalted butter Grind snaps into a simi-fine dust. Mix with melted butter to make the crust. Mix the following in a mixing bowl: 1 can raw unsweetened pumpkin 6 bars cream cheese 7 eggs 1 cup brown sugar 2tbs pumpkin spice 1tbs cinnamon 1/2 tbs nutmeg 6 oz evaporated milk 3 tbs vegetable oil Use a springform mold or a pie plate to make your crust/shell. Don’t bake crust ahead of time as the butter will melt and you’r crust will shrink. Add the mixed ingredients to the crust you’ve formed with the butter/ginger snap mixture. Bake at 375 for 70 minutes. It’s ok if it’s still jiggly in the middle. It’ll set up when it cools. To make the sweet cream icing, whip 1 quart heavy cream with 1.5 cups confectioners sugar until stiff peaks, add 1.5 melted blocks of cream cheese and continue to mix until smooth soft peaks. Chill in the fridge for 15-20 minutes. To make the caramel: Heat 1 cup granulated sugar in a medium saucepan over medium heat, stirring constantly with a whisk. Sugar will form clumps and eventually melt into a thick brown, amber-colored liquid as you continue to stir. Be careful not to burn it. To insure you don’t burn it, melt in a double boiler. It will take longer to brown, but it will not burn. Once sugar is completely melted, immediately stir in 1/2 stick unsalted butter until melted and combined. Be careful in this step because the caramel will bubble rapidly when the butter is added. If you notice the butter separating or if the sugar clumps up, remove from heat and vigorously whisk to combine it again. After the butter has melted and combined with the caramelized sugar, cook for 1 minute without stirring. Very slowly stir in 1/2 cup of heavy cream. Since the heavy cream is colder than the hot caramel, the mixture will rapidly bubble when added. After all the heavy cream has been added, stop stirring and allow to boil for 1 minute. It will rise in the pan as it boils. Remove from heat and stir in a couple pinches of salt. Use a spoon to “drizzle” over your cheesecake! Enjoy and thank me later. Get your mind out of the gutter. That’s not a “balloon knot”! It’s my Meatermade! I really hope you bought your significant other a @meatermade thermometer for Christmas. It is the only way to cook a proper Beef Wellington! Rolled in spinach, Dijon mustard, and mushroom duxelles. Smoked at 400 degrees in the @traegergrills until it hit 130 internal temp. I let it rest plenty but still a lot of moisture on the cutting board. Taste is phenomenal though. Trout city has been open for business since November 1st. Water temps were great and the trout were chomping. This week it has slowed due to rising water temps and is really tough to catch more than a limit. 75 degrees in December is great, for most folks. I wish it was 50 and overcast! Had Saturday off to cook for CeeLo. No big deal. Then had to cancel yesterday due to battery/wiring issues. My guy knocked em out yesterday for me so I could run my trips today. Put in this morning and the trolling motor wouldn’t work. So I rescheduled the morning trip for another day so I could take the TM to the shop. Put the boat back in at 11:00 for my noon trip to find out a shrimp boat sank and spilled a lot of fuel into Shem Creek. So I ran way up the river, put the anchor out, and was able to throw up a very heavy stringer of 20. Caught some nice reds and a sheepy too. A great afternoon. (RIP Shem creek.)
