Triple Veggie and Chickpea Curry Noodle Bowl
One pan and 20 minutes are all it takes to put together this delicious udon noodle and vegetable dish.

Let’s talk a little bit about this recipe. Mushrooms are cooked up with some sesame oil and then broccoli is added into the mix. After a few minutes the chickpeas, tofu cubes, spices, noodles, accompanying spice pack, and water all get thrown into the pan. This is one pan cooking at its finest. An easy recipe that you can make too! A delicious noodle meal ready, and on the table, in under 20 minutes? It can be done. I highly recommend the optional toppings. Avocado lends a rich flavor while the cilantro and green onions add the fresh element. And then we’ve got the sesame seeds for a bit of crunch and lime juice for a touch of tang. It’s such a simple and flavorful dish using only 10 ingredients.

1 (8 ounce package sliced mushrooms rinsed and lightly dried with a paper towel to remove excess water)
1 (6-ounce) package broccoli florets (If you can’t find 6 ounces most stores carry 12 ounces and save half for a future recipe)
1 (5-ounce) package fried tofu, cubed ( Again if you can't find a 5 ounce package most stores carry 10 ounce and save half for a future recipe)
1 tablespoon yellow curry powder
1 teaspoon fresh crushed garlic
1 teaspoon pure maple syrup
1 package Original Shoyu Flavor Fortune Udon Noodles
Optional toppings: Fresh cilantro, Green onions, Sesame Seeds, Avocado slices, and lime slices
Heat a large pan over medium heat 2 minutes. Add sesame oil and mushrooms. Stir to coat with oil. Cook 5-7 minutes. Stirring occasionally.
Add broccoli florets, stir to combine and cook 5 minutes.
Add garbanzo beans and tofu. Stir to combine. Add curry, ginger, garlic, and maple syrup. Stir to combine ingredients.
Add noodles, spice packet and water. Cover and heat 3-4 minutes.
Serve hot and top with optional toppings of fresh cilantro, green onions, sesame seeds, avocado slices, and lime slices.
