Ingredients: 1 1/2 cups graham cracker crumbs. 1/4 cup unsalted butter, melted. 1 cup cream cheese, softened. 1/2 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup cherry pie filling. 1/4 cup sour cream. Whipped cream and fresh cherries for garnish optional.
Instructions: Warm up your oven to 325F 160C and put cupcake liners in a muffin tin. Put the graham cracker crumbs and melted butter in a bowl and mix them together. Make sure the crumbs are covered in butter all over. About a tablespoon of the graham cracker mix should be pressed into the bottom of each cupcake liner. To make the crust, press it down hard with the back of a spoon. Mix the sugar and cream cheese in a different bowl until the mixture is smooth and creamy. One egg at a time, making sure to mix well after each addition. Add the vanilla extract and mix well. Fill each cupcake liner about two thirds of the way to the top with the cream cheese mixture. Spread it out over the graham cracker crust. In the middle of each cupcake, put a teaspoon of cherry pie filling. Before you put the cupcakes in the oven, heat it up. Bake them for 20 to 25 minutes, or until they are set and the edges are just barely golden. Take them out of the oven and let them cool for 10 minutes in the muffin tin. After that, move them to a wire rack to cool completely. After the cupcakes have cooled, put them in the fridge for at least two hours, or until they are very cold. Before serving, put a dollop of sour cream on top of each cupcake. If you want, you can decorate them with whipped cream and fresh cherries. Have fun with your tasty Cherry Cheese Cupcakes!
