The sweet cherries and sour lime filling in this Cherry Lime Tart go so well together. The crust is made of buttery graham crackers. It's a beautiful and refreshing dessert that's great for any event.
Ingredients: 1 1/2 cups graham cracker crumbs. 1/3 cup granulated sugar. 6 tablespoons unsalted butter, melted. 1 can 14 ounces sweetened condensed milk. 1/2 cup freshly squeezed lime juice. 1 tablespoon lime zest. 1 teaspoon vanilla extract. 1 cup fresh cherries, pitted and halved. Whipped cream, for serving optional.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix together graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture evenly into the bottom and up the sides of a 9-inch tart pan. Bake the crust for 10 minutes, then remove from the oven and let it cool slightly. In another bowl, whisk together sweetened condensed milk, lime juice, lime zest, and vanilla extract until smooth. Pour the filling into the cooled crust, spreading it out evenly. Arrange cherry halves on top of the filling. Bake the tart for 15-20 minutes until the filling is set. Remove from the oven and let it cool completely. Refrigerate for at least 2 hours before serving. Slice and serve with whipped cream if desired.
