These Cherry Parfaits are a great way to cool off. They have sweet cherries, creamy Greek yogurt, crunchy granola, and a touch of honey.
Ingredients: 2 cups cherries, pitted and halved. 1/4 cup sugar. 1 teaspoon lemon juice. 1 cup Greek yogurt. 1/2 cup granola. 1/4 cup honey. Fresh mint leaves for garnish.
Instructions: Put cherries, sugar, and lemon juice in a saucepan and mix them together. Over medium heat, stir the mixture every now and then until the sugar dissolves and the cherries release their juices. This should take about 5 to 7 minutes. Leave it alone until it's cool enough to touch. Put the cherry mixture, Greek yogurt, and granola in serving bowls or glasses. Add honey to the top of each layer. Stack the glasses until they are full, and finish with a dollop of Greek yogurt on top. Add some fresh mint leaves as a garnish. Put it in the fridge for at least an hour before you serve it. Have fun with your tasty Cherry Parfaits!
