Craving for ramen as your super! This food truck has bring your dream come true! Chewy noodles and the just set egg spilling its yolk into the porky depths of soup. Eating ramen right beside the road side might give you different environment rather than just sitting inside the restaurant!

This Sichuan Chicken Noodle Salad has spicy and flavorful chicken, chewy noodles, and a dressing that is based on Sichuan food. This is a great dish for a cool and spicy meal.

Ingredients: 200g chicken breast, cooked and shredded. 150g dried wheat noodles, cooked and cooled. 1/2 cup cucumber, julienned. 1/2 cup carrots, julienned. 2 green onions, thinly sliced. 2 cloves garlic, minced. 2 tbsp sesame oil. 2 tbsp soy sauce. 1 tbsp rice vinegar. 1 tsp Sichuan peppercorns, crushed. 1 tsp chili oil adjust to taste. 1/4 cup roasted peanuts, chopped. Fresh cilantro leaves for garnish.

Instructions: In a large bowl, combine the cooked chicken, cooked noodles, cucumber, carrots, and green onions. In a small bowl, mix together the minced garlic, sesame oil, soy sauce, rice vinegar, crushed Sichuan peppercorns, and chili oil. Pour the dressing over the salad ingredients and toss everything together until well combined. Garnish with chopped roasted peanuts and fresh cilantro leaves. Serve immediately or chill in the refrigerator before serving.
