Delight in the flavors of fall with these Pumpkin Spice Chex Party Mix Cookies. A blend of crunchy Pumpkin Spice Chex cereal, white chocolate chips, and chopped pecans come together in a soft and chewy cookie that's perfect for autumn gatherings.
Ingredients: 2 cups Pumpkin Spice Chex cereal, crushed. 1 cup all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1/4 cup packed brown sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 cup white chocolate chips. 1/2 cup chopped pecans.
Instructions: Preheat the oven to 350F 175C. Line a baking sheet with parchment paper. In a bowl, whisk together the flour, baking soda, and salt. In a separate large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the dry flour mixture to the wet ingredients, mixing until just incorporated. Fold in the crushed Pumpkin Spice Chex cereal, white chocolate chips, and chopped pecans. Scoop tablespoon-sized portions of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the cookies are golden brown around the edges. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
