Raspberry compote with ginger, dates and chia seeds❣️ Recipe: 250 g frozen raspberries 2-4 dates 10 cm fresh ginger, grated 1 apple, diced, optional 1 tbsp water ----------- Added afterwards: 2 tbsp chia seeds dash of vanilla powder, optional Instructions: In a small saucepan, put the raspberries, dates, the ginger and a bit if water (plus the apple or any other fruit you have laying around, especially those who are on the verge of going bad) and cook at a medium-low heat for about 10 minutes or until everything is combined. You can mix with a fork every now and then to speed up the process. Or, if you prefer it super smooth I recommend using a hand blender before you add in the chia seeds. When ready, take off the heat and put the chia seeds and vanilla powder in, stir and leave to cool for few minutes before putting it in a jar and in the fridge.
