With layers of fudgy brownies, raspberry compote, and velvety cream cheese, this dessert is the best there is. Having rich chocolate and tart raspberries together in this parfait is a great combination.
Ingredients: 1 box fudgy brownie mix. 1/2 cup unsalted butter, melted. 2 large eggs. 1/4 cup water. 1 cup fresh raspberries. 8 oz cream cheese, softened. 1/2 cup powdered sugar. 1 tsp vanilla extract. 2 cups heavy cream. 1/4 cup granulated sugar. Chocolate shavings for garnish.
Instructions: Warm the oven up to 350F 175C and grease a baking dish. Put brownie mix, melted butter, eggs, and water in a bowl. Mix everything together well. Put the brownie batter into the baking dish that has been prepared, and then bake it according to the directions on the package. Before cutting the brownies into small cubes, let them cool all the way down. A fork should be used to mash half of the raspberries in a different bowl. Set this aside. Beat cream cheese until it's smooth in a different bowl. After you add the powdered sugar and vanilla extract, keep beating until everything is well mixed. In a bowl that has been chilled, beat the heavy cream and sugar together until stiff peaks form. Add the whipped cream to the cream cheese mixture slowly. To make the parfait, put the brownie cubes, mashed raspberries, and cream cheese mixture in serving glasses in that order. Add more layers until the glasses are full, and then put a dollop of the cream cheese mixture on top to finish. Add the last few fresh raspberries and chocolate shavings as a garnish.
