Gluten free maple mustard chicken meatballs and garlic pinwheels 😋
Tried doing garlic knots but the gf dough was a bitch so pinwheels saved the day LOL!

Awesome Chicken Meatballs
Ingredients
1 Cup breadcrumbs
1 Large Egg
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
1/4 Tsp Poultry Seasoning
1/4 Tsp Pepper
1/4 Tsp Salt
1/4 Tsp Chili flakes
1/4 C Chicken Stock
1/4 C Water
1 LBS Chicken
Tools
Skillet pan or flat pan
Cookie sheet
Large bowl
Food processor or Blender
Cookie scoop
Measuring spoons and cups
1. In a high-powered blender or food processor place 1 pound of your chicken cut up into cubes Then Pour in the 4th cup of chicken stock Along with the garlic powder, onion powder, salt Poultry seasoning And Chili flakes Running your food processor blender until the chicken and seasonings for my thick sticky paste.
2. Once you have your seasoned paste paste you will add your egg and a half cup of water Mixing well. Once I consistency, you will add your cup of breadcrumbs to your meatball batter, Adjusting the amount you need based on the consistency of your dough. You wanted to be Just about cookie dough consistency maybe a little thinner.
3. Now for this third step, I like to have a cookie scoop on hand as it helps me get meatballs that are about the same size every time, but you were free to do this with just your hands and your eyes. Using the cookie scoop, you wanna scoop the meatball into your hand, preferably gloved and gently work it between both hands until you have a ball now you can fry these immediately, But if you want more uniform consistency, it’s " best to freeze them for About 30 minutes to an hour.
4. Once you have your meatballs, shaped and frozen you wanna take a skillet type pan and thinly coated the bottom and oil turning the heat on until it’s nice and hot. Then you wanna take your meatballs an inch apart half an inch apart I’m a hot pan frying each side evenly until you have a thin crispy coating on each side of the meatball. Then you want to take those meatballs and place them once again about an inch apart on a flat baking sheet in them in the oven for about 20 minutes at 350°.
Now you can take your delicious chicken meatballs, and use them for whatever you want as they are versatile, I prefer to use them in a nice chicken vegetable Alfredo Which I will also place up soon.
Note: You Want to spray your cookie sheet in a thin layer of Crisco or Coat it in a layer of butter. Otherwise your meatballs will stick to the pan or you can boil them in some sort of sauce instead of baking them once you have them shaped and fried, you just want to make sure they’re cooked all the way through at the end because you are working with chicken.
