Apple Cookie Crumble
Ingredients
Cookie Crust
3/4 Cups unsalted butter
1 Cup Brown Sugar
1/4 Cup Granulated Sugar
1 Egg + 1 Yolk
1 Tbs vanilla
1 3/4 Cups Flour
1 Tsp Baking soda
Crumble Topping
1 Cup + 2 Tbs White Sugar
1/2 Tbs Cinnamon
3/4 Cup Butter
1/2 Tsp Salt
1 1/2 cup all purpose flour
Apple Filling
3 Pink Lady
3 Granny Smith
1/4 C flour
1 Tbs lemon
1 1/2 Tsp Apple pie spice
1/4 C White Sugar
1/4 C Brown Sugar
6 Tbs Butter
1. First preheat your oven to 350 degrees, then wash, peel and slice your apples. This is easier if you have an apple slicer and an Apple peeler. But you can do this with a regular knife. Then in a medium size Bowl add your apples, Apple pie Spice and 1/4 cup of flour Mixing Them with a rubber spatula until your apples are evenly coated in the Flour and spices. Then add your white sugar, Brown Sugar and lemon juice to your apples until the mixture is evenly coated before placing to the side for a moment.
2. On a cutting board dice your cold butter into cubes and toss with your apples before dumping the whole mix into a large pot over medium heat stirring and tossing until the butter melts and the sugar and flour mixture becomes a thick sticky coating over your apples which should have begun to soften just slightly before removing from the heat and Pouring the filling back into its bowl and covering and placing in the fridge while you work on the rest of the recipe.
3. For the cookie crust Cream together 3/4 Cups unsalted butter with 1 cup Brown sugar, 1/4 cup white sugar, Eggs, and Vanilla in one bowl while in a smaller bowl mix 1 3/4 Cups Flour with 1 Tsp Baking soda and 1/2 Tsp salt before slowly incorporating the mixture 1/4 cup at a time to the egg and sugar mixture until you have a thick malleable dough.
4. With a 10 inch pound cake pan would the cookie dough into the pan with and intention in the center that leaves a vouch a 1 to 1 1/2 inch crust around the edge before placing in the freezer while you work on your crumble Topping
5. Dice another 3/4 cups of Butter into cubes a place in the freezer to chill while you prepare the ready of your ingredients. Then in a food processor add 1 1/2 cups of flour 1 cup + 2 Tbs of white sugar 1/2 Tbs cinnamon and 1 tsp salt to a food processor, then add the chilled butter cubes and run the food processor until the dough comes to a pretty crumble dough before putting in a bowl and Covering to chill.
6. After about 20 minutes remove your chilled cookie crust from the freezer and place in the oven for 12 minutes until it sets a little once itās done remove it from the oven and pour as much of your apple filling into the vent that you can gently pressing it into place with a rubber spatula until your pie is full to your satisfaction then turn your oven up to 400 degrees and the pie to the oven for 15 minutes before removing for the final time to take your crumble from the freezer and crumble and gently press to the top of your dessert until itās to your liking before returning to the oven for the final 10 minutes or until your crumble is golden on top.
