Baking with Buddy: Slow cooker chicken philly sandwiches

The spices were packed up, most of the cookware was packed up and the boxes were quickly taking over every available space in the apartment. 2 boneless skinless chicken breasts, thinly sliced

1/2-1 large onion, thinly sliced

1/2-1 bell pepper, I use a mix of green, yellow, and orange in strips

garlic powder

season salt (I prefer Lawry's)

pepper

smoked or regular paprika

olive oil

sub rolls, hoagie buns, etc.

cheese slices, we used provolone.

Notes: 

This works best in an iron skillet or a pan that can go in the oven.

I used half an onion and half a bell pepper but you can add more to make the recipe go further, or you can leave either one or both out altogether. I can't eat bell peppers so I cook them and pick them out.

Preheat the oven to 350*. Put the sub rolls on a sheet pan and set to the side.

Season the chicken with olive oil, season salt, garlic powder, pepper, and paprika. Be careful with the season salt, you can always add more later. 

Spray the skillet with non-stick spray and add a bit of olive oil. Heat the pan on medium high. Add the chicken and sauté until chicken starts to turn white. Add the peppers and onions and a little more season salt, then sauté a few more minutes until chicken is cooked.

You can split the rolls open, put cheese slices in them or just leave them plain.

Put the rolls in the oven, then the pan of chicken on another rack. The onions and peppers will caramelize a bit more and stay warm while the rolls heat. 

Remove everything from the oven. Serve chicken mixture on the rolls with cheese, mayo, or whatever condiments you like.
