This Chicken Chalupa recipe is a fabulous combination of tender diced chicken, flavorful vegetables, and melted cheese, all wrapped in a crispy tortilla shell. It's a delicious and satisfying dish that's perfect for any occasion!
Ingredients: 1 lb boneless, skinless chicken breasts, diced. 1 onion, diced. 1 bell pepper, diced. 2 cloves garlic, minced. 1 can 15 oz diced tomatoes. 1 can 15 oz black beans, drained and rinsed. 1 cup frozen corn kernels. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste. 1 cup shredded cheddar cheese. 1/4 cup chopped fresh cilantro. 8 small flour tortillas. 2 tbsp olive oil.
Instructions: Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned, about 5-7 minutes. Add diced onion, bell pepper, and minced garlic to the skillet. Cook until vegetables are tender, about 5 minutes. Stir in diced tomatoes, black beans, corn kernels, chili powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes, stirring occasionally. Preheat oven to 350F 175C. Place a small amount of the chicken mixture in the center of each flour tortilla. Top with shredded cheddar cheese and chopped cilantro. Fold the sides of the tortillas over the filling, then roll up tightly to form a chalupa. Place the chalupas seam-side down on a baking sheet lined with parchment paper. Bake in the preheated oven for 10-12 minutes, or until the tortillas are golden brown and crispy. Serve hot, garnished with additional cilantro if desired.
