A delicious and easy one-pan meal combining the flavors of chicken fajitas with creamy pasta.
Ingredients: 2 chicken breasts, thinly sliced. 2 bell peppers, thinly sliced. 1 onion, thinly sliced. 2 cloves garlic, minced. 2 cups chicken broth. 1 cup heavy cream. 2 cups penne pasta. 1 cup shredded cheddar cheese. 2 tablespoons fajita seasoning. 2 tablespoons olive oil. Salt and pepper to taste. Chopped cilantro and lime wedges for garnish.
Instructions: In a large skillet, heat olive oil over medium-high heat. Add sliced chicken and cook until browned on all sides, about 5-6 minutes. Remove chicken from skillet and set aside. In the same skillet, add sliced bell peppers, onion, and minced garlic. Cook until vegetables are tender, about 5 minutes. Add chicken broth, heavy cream, penne pasta, fajita seasoning, salt, and pepper to the skillet. Stir well to combine. Bring mixture to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, or until pasta is cooked and sauce has thickened. Once pasta is cooked, stir in cooked chicken and shredded cheddar cheese until cheese is melted and chicken is heated through. Garnish with chopped cilantro and serve with lime wedges. Enjoy!
